Melon Ball Salad with MCT Oil Vinaigrette

A summer side dish that's aesthetically pleasing and naturally hydrating? You can't get much better than that. This Melon Ball Salad with a simple Lemon Honey Vinaigrette is perfect for a summer cookout or pool-side snack. We highly recommend making the MCT Oil vinaigrette in bulk because you won't be able to get enough of that sweet, citrus flavor. 

Ingredients

2 c fresh watermelon

2 c fresh cantaloupe

2 c honeydew melon

8 oz Cilingene (Fresh Mozzarella Cheese)

Fresh herbs like basil and mint

For the Vinaigrette

1 lemon, juiced

2 tbsp red wine vinegar

1/4 c SR® Organic MCT Oil

1 tbsp honey

Salt and pepper to taste

 

Instructions

1. Combine all Vinaigrette ingredients into a bowl and whisk until emulsified. 

2. Use a melon ball scooper or rounded teaspoon to create round balls of fresh melon and place in a large bowl along with the fresh mozzarella cheese balls (Cilingene). 

3. Pour vinaigrette over salad mixture and stir to combine.

4. Top with fresh herbs and enjoy chilled!
