These wraps are a delightful combination of savory ground chicken, vegetables, and potent spices wrapped in crunchy butter lettuce leaves, so you don’t have to worry about the extra carbs.
The key to this flavorful recipe is the sauce used to marinate the chicken and vegetables. It perfectly balances sweet, salty, tangy, and spicy elements. We also included our MCT Oil, which provides clean and sustained energy throughout the day.
Ingredients
1 lb Ground Chicken
¼ cup Carrots, grated
¼ cup Mushrooms, sliced
2 cloves of Garlic, minced
1 ½ knob of Fresh Ginger, minced
Handful of Fresh Cilantro, chopped
1 head of Butter Lettuce
6 Green Onions, finely sliced
Juice of a Lime
Sesame Seeds
Sauce Ingredients
2 tbsp Soy Sauce
2 tbsp Rice Wine Vinegar
1 tbsp SR Organic MCT Oil
1 tsp Chili Garlic Sauce
1 tbsp Hoisin Sauce
1 tsp Sesame Seed Oil
1 tsp Ginger, minced
1 tsp Garlic, minced
A small handful of Green Onion, thinly sliced
First, prepare the sauce by adding all the ingredients to a mixing bowl. Stir well and set aside.
Add oil to a preheated saucepan and saute the onion, garlic, and ginger. Cook for about five minutes.
Add the ground chicken and cook on medium heat until browned, for about eight minutes.
Add ginger and garlic. Sauté for two minutes.
Add green onions, carrots, and mushrooms. Saute for two minutes.
Pour the sauce over the chicken mixture and combine thoroughly. Cook for about two more minutes and remove from the heat.
Begin to prepare the lettuce wraps. Add about ⅓ cup of chicken mixture to each lettuce cup. Top with fresh cucumber and cilantro.
Drizzle with lime and enjoy!
